"They’re holding the Styrofoam containers like it’s gold,” Rambis said.

Judging takes place from noon to 2:30 p.m. Saturday. Winners will be announced at 3 p.m. Saturday at the Flat Branch Stage.

From competitor to judge

1. Each of the 50 competitors places their barbecue in the Styrofoam container marked with their team number.

2. Competitors then turn in the barbecue to volunteers at the judging tent.

3. Volunteers take the entries to Kansas City Barbecue Society representative, Mike McMillan.

4. McMillan renumbers the containers to ensure a blind tasting.

5. Table captains present each entry to the judges, who are seated at nine tables with their backs to the tent entrance.

Judges will score the appearance, taste and tenderness of barbecue entries on a scale of 1 to 9. A score of 1 means an entry is disqualified.

All 54 judges are certified by the Kansas City BBQ Society.

The judging tent is not open to the public.
