While Executive Chef Leslie Jett, center, instructs students Brandon Joiner, left, and David Grenier, second from left, to go through the peeled potatoes and remove the brown spots, student Rob Miller listens to the chef’s directions.

A dinner series at MU's Eckles Hall offers upper-level undergraduates a chance to put into practice the knowledge and skills they have developed while studying in the university's Hotel and Restaurant Management program. A schedule of events can be found here.

Leslie Harris, left, and Justin Dougherty prepare the banquet room in Eckles Hall. Both are Hotel and Restaurant Management students.
Ben Verkamp checks to make sure the mix is just right. "There's tons of little things that need to be worked out," says Verkamp, one of the students in charge of the dinner.
