Michael Ivancic trims meat and fat off of a 298-pound hog that provided the pork for Broadway Brewery's booth at the Roots 'N' Blues 'N' BBQ Festival on Saturday at Stephens Lake Park. "With a pit roast like this, you gotta bury it for a few days in some heat," Ivancic said.
