Food trend experts and farmers say edamame remains a niche product — somewhere between chia seeds and quinoa in popularity — but they see potential for growth if food companies can figure out an efficient processing system for a crop that must be harvested and packaged quickly.

FarmedHere, an indoor vertical farm, is housed an old warehouse in Bedford Park, Ill. Its crops include basil, arugula and microgreens, sold at grocery stores in Chicago and its suburbs. Officials at FarmedHere plan to expand growing space to 150,000 square feet by the end of next year. It currently has about 20 percent of that growing space now.
Children were given the opportunity to explore a variety of trucks at the Tons of Trucks event on Wednesday at Cosmopolitan Park. From concrete mixers to firetrucks, children could explore the inside of the trucks, honk the horns and speak to the professionals who operate them.

The Hickman Kewpies lost to the Helias Crusaders 8-11 in a home match Wednesday afternoon. The Kewpies' Jonathan Jones pitched despite having a sore right ankle.
Ruby Kubat buys wholesale houses and storage units and then resells the goods at the Lindberg Flea Market in Columbia. "I just don't like to throw things away," Kubat said on why she started this venture.

Hickman High School's boys tennis team won over Helias Catholic High School on Monday at Cosmo Park.
A tour group visits Budweiser's Clydesdales, who are housed at Warm Springs Ranch in Boonville. This includes Hope, who recently starred in Budweiser's Super Bowl commercial and is destined to be a brood mare, according to farm manager John Soto.
