Sycamore Restaurant hosted a Whole-Hog Dinner on Sunday night.
The $85 ticket to the event covered the cost of everything from fried pigs' ears to a pork tenderloin wrapped in bacon, along with wine from Les Bourgeois Vineyards and beer from Broadway Brewery.
Bernadette Dryden, co-leader of the local Slow Food chapter explained that the proceeds of the event would fund the expansion of an elementary school program that connects children with local farmers currently in progress at Lee Elementary School in Columbia.
The Slow Food movement began in Italy and has since spread to many regions of the world; it counteracts fast food by celebrating the value of eating healthful, local and thoughtfully prepared food.
Chef Mike Odette of Sycamore Restaurant has applied many of the Slow Food movement's principals to his restaurant and was recognized for his excellence in 2009 with a nomination for best chef in the Midwest by the James Beard Foundation.
